Tex-Mex Beefiness and Rice Casserole

  • one lb riced cauliflower
  • 1 lb ground beef
  • ane small xanthous onion diced
  • 1 red bell pepper diced
  • iii garlic cloves minced
  • one-1/2 cups store-bought roasted tomato salsa
  • 1 tsp dried oregano
  • 1 tbsp chili powder
  • Kosher common salt
  • Freshly ground blackness pepper
  • 4 large eggs whisked
  • 6 cherry tomatoes cut in one-half
  • 1 jalapeño or serrano pepper thinly sliced crosswise (optional)
  • 1/4 cup fresh cilantro lightly packed

Instructions

  1. Got riced cauliflower? If non, cut upwards a small cauliflower into uniform-size pieces, and pulse 'em in a food processor until the size of rice grains.

  2. Preheat the oven to 350°F with the rack in the middle.

  3. Heat a large, oven-proof skillet over medium-high rut. Add together the beef when the pan is hot. Break upwards the meat with a spatula. Cook, stirring, for 5 to vii minutes or until it's no longer pink.

  4. Add the onion and bong pepper. Cook for 5 minutes until softened.

  5. Add the riced cauliflower and stir to combine. Stir in the minced garlic and cook for one minute or until fragrant.

  6. Pour in the salsa, and add the oregano and chili powder. Flavour to taste with salt and pepper.

  7. Remove the skillet from the estrus, and pour in the whisked eggs. Gently stir to incorporate, and polish the top of the casserole with a spatula.

  8. Top with the sliced tomatoes (cut-side up) and hot pepper, if using. Put the skillet in the oven.

  9. Cook for xl to 45 minutes or until the eggs are set and browned on the edges. Residue for five minutes, and peak with cilantro. Slice and serve.

  10. Extras can be refrigerated for up to 4 days or frozen for upwards to 4 months.

        1. Sad but we don't provide nutritional values on any recipes…sadly any recipes you see on blogs with nutritional content are often inaccurate. Your best bet is to go to the My Fitness Pal app and enter the ingredients separately.

  9. This was just okay. Not plenty flavor for me. Added lots of pickled jalapenos at serving to jazz information technology upward. As well sour foam. It definitely could be half-dozen servings not four.

    1. Good thought on the pickled jalapeños! I added some likewise. Haha see that's why serving sizes are – in my opinion – one of the most irrelevant pieces of a recipe…totally depends on your eating habits and how hungry y'all are. In our house, it was definitely 4 servings 😉 If you had too many leftovers, keep in mind that it would freeze well 🙂

  16. I'g ready to try this recipe, simply usually am non a huge fan of salsa, I know unpopular opinion! Is there annihilation I could substitute for the salsa to still go the proper texture or could I just eliminate it? Thanks!

    1. An equivalent book of canned diced tomatoes would do the trick. Or is it the tomato part of salsa that yous're non a fan of?

    What practise you use to calculate the macros for this recipe? I use Cronometer and it says each serving in 250-ish cals! Yours seems much more likely to me.

  21. I only wanted to say thanks. I make this all the time. Sometimes I go out out the jalapeno and tomatoes on top because I don't have any. Or I do a green bell and a blood-red onion. I usually cut it into half-dozen servings and so add avocado our guac and sour foam. It's delicious. Dear Nom Nom and your site!!
